How to store extra virgin olive oil and how long it lasts

To store extra virgin olive oil well, four main things are needed: protect it from light, heat, and air, while respecting the minimum shelf life indicated on the packaging.

There isn't one perfect place for all homes. However, there is a simple rule: choose a dry and stable environment, away from heat sources and direct light, and seal the container tightly after each use.

The four enemies of oil: light, heat, air, time

Light, especially direct light, can compromise the quality of the oil. For this reason, it's better to store it in an opaque or dark container and in a closed cabinet, not in a transparent bottle exposed to the window.

Heat accelerates deterioration. The worst place in the kitchen is the shelf above the stove or next to the oven: instead, choose a cool, stable spot, away from heat sources.

Air—that is, oxygen—increases in the empty space of the container as the bottle empties. Additionally, every time you open the cap, new oxygen enters: that's why sealing it tightly and choosing a size compatible with your consumption helps limit contact with the air.

Time matters along with other factors. For this reason, the minimum shelf life and the indications on the packaging remain the reference for the product you purchased.

Where to store it, in practice

Choose a closed cabinet, away from stoves and windows. The cap or lid must remain tightly closed after use. For specific conditions, always follow the instructions on the packaging.

If you buy a large can, don't leave it open on the countertop for weeks. A package protected from light helps preserve the oil, but after opening, limiting contact with air by sealing the container tightly also matters.

Decanting: the most useful trick for those who buy in bulk

A 3-liter can or 5-liter can may be suitable for those who consume oil regularly. If the package remains open for a long time, you can transfer only the amount you use into a clean, tightly sealed, and light-protected container.

You can also use a glass dispenser for the amount in use. The large container should remain closed and protected when not in use.

Filtered or unfiltered: storage also changes

Unfiltered oil may show turbidity or natural deposits. If you choose this variant, follow the product instructions and pay attention to storage. Filtered oil is clearer and may be simpler to manage over time. Neither is "better" absolutely: the choice depends on taste, the product, and how quickly you consume it.

How long it lasts

There isn't a universal number valid for every oil. First, look at the minimum shelf life and the batch information on the packaging. After opening, reseal the container tightly and prioritize consumption: each opening renews contact with the air.

As a general guideline for consumers, the International Olive Council suggests consuming oil within 1–3 months of opening. This is not a guarantee nor does it replace the minimum shelf life or product instructions: the actual time also depends on packaging, light, heat, air, and usage.

Poorly stored oil can lose its aroma and freshness sooner, even if the indicated date is not yet near. Light, heat, air, and time count together: that's why the place where you keep it is as important as the date printed on the package.

How to tell if it's gone bad

Rancid defect is associated with an intense oxidation process. It can be perceived through a clearly unpleasant odor or taste; if in doubt, contact the producer and check the batch.

Prevention is simple: a tightly sealed container, little light, away from heat sources, and packaging appropriate to your consumption rate.
