In our home, in the morning, bread is often cut by hand and honey is poured without too much precision. Itโ€™s not an elegant ritual. Itโ€™s just breakfast, made the way it always has been.

And yet, oil and honey are almost always used in the same distracted way in the kitchen: a drizzle here, a spoonful there, without much thought. Itโ€™s worth thinking about it a bit more โ€“ it changes the dish.

For breakfast: bread, honey, and little else

The simplest combination remains the best: not-too-fresh bread, lightly toasted, and eucalyptus honey poured while still warm, if possible. The warm bread slightly melts the honey, and all its aroma comes out.

Our honey is neither pasteurized nor filtered: the consistency can vary from one jar to another, sometimes more liquid, sometimes denser. This is not a defect; it is simply real honey, processed as little as possible.

For lunch: a drizzle of oil that changes everything

The most common mistake is adding the oil too early, while the dish is still hot: the heat burns the most delicate aromatic notes. An extra virgin olive oil performs best when drizzled raw, after cooking, once the dish has cooled down a bit.

It works on almost everything: legumes, boiled vegetables, a slice of toasted bread. Just a few drops are enough to feel the difference between an ordinary dish and one that tastes of something.

The combination few know: cheese, honey, oil

An aged Pecorino cheese, a teaspoon of honey on top, a drizzle of oil to finish: the saltiness of the cheese, the sweetness of the honey, the slight bitterness of the oil balance each other better than it seems on paper. Itโ€™s an ancient pairing, not a recent invention, often found in country homes in Calabria.

A simple rule to never go wrong

If a dish is hot, add the oil afterwards. If the bread is hot, pour the honey immediately. This almost always applies, and it's easier to remember than any complicated recipe.
